Ingredients
  • 1 tbsp. oil
  • 1 (10oz) bag vegan chik'n strips (we used MorningStar)
  • 1/4 cup peanut sauce (plus extra for topping - we used Trader Joe's Asian style spicy peanut vinaigrette)*
  • 4-5 flour tortillas (can sub gluten free)
  • Spring mix
  • Shredded carrots
  • Crispy chow mein noodles (or sub gluten free alternative)
  • *You can also make a homemade peanut sauce by whisking together 1.5 tbsp. peanut butter, 2.5 tbsp. soy sauce, a splash of unseasoned rice vinegar & sriracha (to taste).
Directions
  • Step 1 Heat oil in a saucepan on medium-high heat.
  • Step 2 Add the chik’n to the saucepan and sauté for ~5 minutes.
  • Step 3 Pour the sauce on top of the chik’n.
  • Step 4 Sauté for another ~5 minutes.
  • Step 5 Crisp each tortilla on a pan on medium-high heat.
  • Step 6 To form the wraps, place spring mix, carrots, noodles, then chik’n strips. Drizzle with more sauce if desired!
