Buttered Garlic Noodles with Parmesan Meatballs

Spaghetti and meatballs with a twist.

Growing up, one of our favorite foods was simply buttery noodles with parmesan cheese. Not only did we want to veganize that dish, we wanted to upgrade it. Enter vegan meatballs.

Made from lentils, brown rice, caramelized onions, and a vegan parmesan made from nuts and nutritional yeast, these are not only delish, they’re also nutrient-packed!

Combine them with buttery garlic noodles and you have a meal that everyone will enjoy!

 

Buttered Garlic Noodles With Parmesan Meatballs

A delicious twist on spaghetti and meatballs!
Prep Time 45 minutes
Cook Time 40 minutes
Total Time 1 hour 25 minutes
Course dinner

Ingredients
  

For the Meatballs

  • 1/2 cup dry green lentils
  • 1/2 cup dry brown rice
  • 2 cups water
  • 1 medium-sized onion
  • 1 cup vegetable broth
  • 1 tbsp brown sugar
  • 3/4 cup cashews
  • 3/4 cup walnuts
  • 3/4 cup nutritional yeast
  • 1 tsp garlic salt
  • 1 tsp parsley
  • 1/2 cup vital wheat gluten

For the Noodles

  • 16 oz spaghetti noodles
  • 2 tbsp vegan margarine
  • 1 tbsp minced garlic
  • 3 handfuls spinach

For the Parmesan Topping

  • 1/3 cup cashews
  • 1/3 cup walnuts
  • 1/3 cup nutritional yeast
  • 1 tsp garlic salt

Instructions
 

  • Preheat the oven to 350º F

Make the Lentils & Rice

  • Add the water, lentils and rice to a small saucepan.
  • Bring to a boil.
  • Simmer & let cook until the water has evaporated (for about 30 minutes depending on the type of rice)

Make the Carmelized Onions

  • Chop the onion into thin slices.
  • Add the onion, veggie broth & brown sugar to a pan and bring to a boil.
  • Turn the heat down to a simmer & cook for about 20 minutes, until all liquid has evaporated.

Make the Meatballs

  • Add the cashews, walnuts, nutritional yeast, garlic salt & parsley to a food processor and blend to a fine powder. Transfer to a mixing bowl & stir in the vital wheat gluten.
  • Add the lentils, rice and carmelized onions to a food processor & blend. Place in the same mixing bowl & combine ingredients, forming a dough.
  • Using a scooper, form the dough into equal sized "meatballs" and place on a lined baking sheet.
  • Bake for about 40 minutes, until crispy, flipping them around every 10 minutes.

Assemble the Dish:

  • Cook the noodles according to package.
  • Melt margarine in a large saucepan over medium heat.
  • Add the garlic & cook for about 3 minutes.
  • Mix in the spinach & cover until wilted.
  • Stir in the spaghetti & meatballs.

Make the Parmesan Topping

  • Blend all ingredients in a food processor
  • Top the noodle dish with the parmesan and enjoy!
