For our 10th day of Christmas we’re sharing a family favorite recipe, chick’n noodle soup. By using:
Your Favorite Vegan Chick’n (we use this brand, Morningstar chick’n strips would also be yum!)
Vegetable Broth
Spices
& Gluten Free Pasta (we use this brand)
you can easily make this classic soup vegan! It’s such an easy recipe, requires just one pot, and the whole family will love it! We hope you enjoy.
Chick’n Noodle Soup
Craving something hearty, warm and delicious? Cozy up with our chick'n noodle soup. It is loaded with chunks of chick'n, veggies and quinoa & rice noodles. A healthy and delicious recipe perfect for winter.
Ingredients
- 1 tbsp butter
- 2 cups chopped onion
- 2 cups chopped celery
- 2 cups chopped carrots
- 1 tbsp chopped garlic
- 1 nine oz bag of vegan chicken, chopped omit this for gluten free or choose your own substitute/add more noodles
- 5 vegan salt free bouillon cubes
- 10 cups of water
- 1 tbsp dried basil
- 1 tsp dried oregano
- 1 tsp garlic salt
- 3 cups uncooked gluten free fusilli pasta (or pasta of your choice
- salt & pepper to taste
Instructions
- Melt butter in a large pot.
- Add chopped vegetables.
- Cook vegetables on medium heat for 5 minutes.
- Stir in diced chick’n, basil, oregano & garlic salt.
- Cook covered for 5 minutes.
- Add water and bring to a boil.
- Dissolve bouillon cubes in water.
- Add pasta and cook for 7-10 minutes, until al dente.
- Serve and enjoy!
