Pressure Cooker Cheesy Rice
Ingredients
- 2 tbsp vegan butter, softened
- 2 cups long grain white rice
- 1/2 cup onion, diced
- 4 cups vegetable broth we prefer water+vegetable bouillon
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp paprika
- 1/2 cup plain, unsweetened rice milk other non-dairy milks will work, but we prefer rice milk for its neutral flavor
- 2 tbsp nutritional yeast
- 1.5-2 cups vegan cheddar or mozzarella shreds
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1/2 tbsp dried parsley for topping
Instructions
- Turn the pressure cooker on the sauté setting on low heat for 6 minutes to allow it to preheat (make sure to let it pre-heat before adding any ingredients).
- Prepare the onion.
- Once preheated, add the butter, rice and onion to the pressure cooker and mix well. Cook for 6 minutes with the lid off, stirring every minute or so.
- Stir in the vegetable broth, garlic powder, onion powder and paprika.
- Put the lid on and change to the rice setting on high for 30 minutes (make sure the steam is set to closed).
- Once done, let sit for 10 minutes. Open the steamer, and let sit for another 5 minutes.
- Open and quickly add in the rice milk, nutritional yeast & vegan cheese shreds. Start with 1.5 cups of cheese and add more if you want it cheesier. Mix until the cheese melts.
- Mix in the salt and pepper, top with parsley and enjoy!

The flavors of this recipe are amazing. I was looking to recreate the “cheesy broccoli rice” that came in a packet and I used to eat during college. Added dethawed chopped broccoli at the end and it was perfect.
My only critique is that 30 minutes of cooking is way too long. The rice is mush after 25. Next time I will only do 10 with an instant pressure release.
30 min to cook rice in a pressure cooker is WAY too long. I used a instant pot, where is doesn’t have a “rice” option on it, so I selected pressure cook. It was complete mush. I knew I shouldn’t have done that, but I had doubled the recipe and thought the time might be adequate.
The flavors were great, I added more nutritional yeast than what the recipe calls for.
Unfortunately all the work and time put into it, it was mushy like a thick mashed potatoes. Now I know.
