Pressure Cooker Gooey Funfetti Cookie

Gooey Funfetti Cookie

This recipe uses a 6″ round pan to make a gooey half baked funfetti cookie in a Crockpot™ Pressure Cooker! Inspired by our cinnamon rolls made in a pressure cooker, we were excited to make another dessert recipe using a pressure cooker.

This cookie is gooey, doughy, and meant to be eaten with a spoon.

Ingredients

You need less than 10 ingredients for this deliciously doughy cookie:

  • all-purpose flour (measured correctly)
  • baking soda
  • salt
  • vegan butter (we recommend butter sticks, softened)
  • light brown sugar
  • non-dairy milk (use your favorite!)
  • pure vanilla extract
  • non-dairy mini chocolate chips
  • vegan rainbow sprinkles

How to make this gooey funfetti cookie

  1. Prepare. Grease a 6″ round baking dish with nonstick spray and set aside.
  2. Whisk the dry ingredients. In a small mixing bowl, whisk the flour, baking soda and salt. Set aside.
  3. Beat the wet ingredients. In a medium mixing bowl, beat the butter and brown sugar until light and fluffy. Add the milk and vanilla to the wet mixture and mix until combined.
  4. Combine. Add the dry mixture to the wet and mix until just combined.
  5. Mix in the add-ins. Fold in the chocolate chips and sprinkles.
  6. Press into pan and cover tightly. Press the dough into the prepared pan. Place a paper towel on top of the pan followed by a large piece of foil. Tightly wrap the foil around the pan with the paper towel inside of the foil.
  7. Prepare the pressure cooker. Place 2 cups of water into the cooking pot of a Crockpot™ Pressure Cooker and insert the rack. Place the wrapped pan in the pressure cooker on top of the rack. Put the lid on the pressure cooker and make sure the steam release is shut.
  8. Bake. Turn the pressure cooker to Dessert mode on high for 15 minutes. It will heat first, then cook for 15 minutes. Once done, allow the steam to naturally release for 10 minutes (do not open the lid or manually release the steam – just leave as-is for 10 minutes) then open the steam release and then open the lid.
  9. Remove and enjoy. Using oven mitts, carefully remove the pan from the pressure cooker. Carefully take the foil and paper towel off of the pan. Allow to cool slightly, then enjoy on its own or with non-dairy ice cream.

This deliciously gooey cookie is made in a pressure cooker! It's made in less than 30 minutes and meant to be eaten warm out of the pan, so grab a spoon and dig in!

Ingredients
  

  • 1/2 cup + 1 tbsp (70 g) all-purpose flour*
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup (56 g) vegan butter, softened*
  • 6 tbsp (82 g) packed light brown sugar
  • 1/2 tbsp (7 mL) non-dairy milk
  • 1/2 tsp pure vanilla extract
  • 3 tbsp (32 g) non-dairy mini chocolate chips, plus extra for topping
  • 2 tbsp (17 g) vegan rainbow sprinkles, plus extra for topping

Instructions
 

  • Grease a 6" round baking dish with nonstick spray and set aside.
  • In a small mixing bowl, whisk the flour, baking soda and salt. Set aside.
  • In a medium mixing bowl, beat the butter and brown sugar until light and fluffy.
  • Add the milk and vanilla to the wet mixture and mix until combined.
  • Add the dry mixture to the wet and mix until just combined.
  • Fold in the chocolate chips and sprinkles.
  • Press the dough into the prepared pan. Top with extra chocolate chips and sprinkles.
  • Place a paper towel on top of the pan followed by a large piece of foil. Tightly wrap the foil around the pan with the paper towel inside of the foil.
  • Place 2 cups of water into the cooking pot of a Crockpot™ Pressure Cooker and insert the rack. Place the wrapped pan in the pressure cooker on top of the rack. Put the lid on the pressure cooker and make sure the steam release is shut.

Notes

  1. Measure your flour using the spoon-and-level method.
  2. For best results, you should use vegan buttery sticks. You should soften for 30 minutes to one hour before using.

    Hi there! What if my pressure cooker didn’t come with a rack (I can’t remember if it came with one lol)? Would I still be able to do without it?

      Hi! You need something to keep the pan above the water so that the pressure cooker can create steam without the pan being submerged in water. Your pressure cooker should have come with a rack, however maybe you can order a replacement or search for an item that can be used in place of it? Hope this helps!
