Spinach Dip Pita Pizzas

Looking for a simple weeknight meal or party appetizer? Look no further than these spinach dip pita pizzas. Combining our classic spinach dip with garlic butter pitas and mozzarella cheese, these pizzas are so good that they'll quickly become part of your weekly rotation.

Ingredients
  

Spinach Dip

  • 1 cup (8oz; 226 g) vegan cream cheese
  • 1/2 cup (113 g) vegan mayo
  • 4 cups (120 g) packed fresh spinach, chopped
  • 2 tbsp (10 g) nutritional yeast
  • 1/2 tbsp (7 mL) lemon juice
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper

For assembling

  • 4+ vegan pitas or flatbreads of choice* (gluten-free if desired)
  • Vegan butter
  • Garlic salt
  • 1 ½ cups (170 g) vegan mozzarella cheese shreds

Instructions
 

  • Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  • Place all ingredients for the spinach dip in a large mixing bowl and mix until well combined.
  • Spread a thin layer of vegan butter on each pita and top with a sprinkle of garlic salt. Place, butter side up, on the baking sheet (you may need a second baking sheet to fit them all). Evenly distribute the spinach dip amongst the pitas. Spread the spinach dip so that it evenly coats the pitas, then sprinkle an even amount of the mozzarella over each.
  • Bake for 10-12 minutes, until the cheese is melty. Slice each into 4-6 pieces and serve.

Notes

*Depending on the size of your pitas, you can make 4-6 pizzas out of this recipe. With 4 pitas, you will have more spinach dip per pizza, but with 5 or 6 pitas you will have a thinner layer of the dip. You can add more cheese to taste, if needed.
