This dish is packed full of veggies and couldn't be easier to make — simply throw all of your ingredients into a Crockpot® Slow Cooker and let it handle the work for you!
Add all ingredients, minus kale/spinach, to your slow cooker. Stir well. Cook on low for 4-5 hours, or high for 2.5-3 hours, until potatoes are fork tender.
Add kale or spinach, then cook for another 15-30 minutes, until wilted. Stir, then taste and add more salt and pepper, as desired. Serve immediately, or transfer to your CrockpotGo™ Electric Lunch Box and take on the go! We recommend serving with avocado slices, green onion, and a drizzle of sriracha or a sauce of your choice.

If you would like to use vegan sausage in this recipe, we recommend using your sausage of choice and sautéing according to package instructions prior to adding to the Crockpot® Slow Cooker.
