Veggie Fried Rice
This fried rice easily rivals takeout - so simple and so delicious!
- 1 cup uncooked rice
- 2 tbsp vegan butter
- 2 cloves garlic finely diced
- 1 cup onions chopped small
- 1 cup carrots julienned
- 1 cup frozen peas
- 1 tsp garlic powder
- 3 tbsp soy sauce tamari or liquid aminos for gluten free option
- 1 tsp sesame oil
- 2 tbsp chopped green onions, for topping
Cook rice according to package instructions.
Melt butter (this is our favorite) in a large skillet. Add garlic, onions, carrots & peas and cook, covered on medium heat for 7 minutes.
Stir in garlic powder.
Add rice and soy sauce or tamari. Cook and stir continuously for about 3 minutes. Stir in sesame oil (we like this kind) and cook for another minute. Top with green onions and serve.
