Chocolate Covered Strawberry Smoothie Bowl

Smoothies don't have to be boring -- and this smoothie bowl recipe proves that! A thick and flavorful smoothie base is topped with lots of granola, fruit, and chocolate for an irresistible bowl!

Ingredients
  

Chocolate Covered Strawberries (Optional)

  • 2 strawberries
  • 2 tbsp non-dairy chocolate chips
  • 1/2 tsp refined coconut oil

Smoothie Base

  • 1 1/2 - 2 frozen bananas
  • 1/2 cup frozen strawberries
  • 2 tbsp cocoa powder or chocolate protein powder
  • 2+ tbsp non-dairy milk
  • Maple syrup, to taste

Toppings

  • 1/2 banana, sliced
  • Vegan granola (gluten free optional)
  • Non-dairy mini chocolate chips and chocolate chunks

Instructions
 

  • If making the chocolate covered strawberries: Wash and dry the strawberries. Add chocolate and coconut oil to a small bowl. Microwave in 30 second intervals, stirring in between, until smooth and creamy. Coat each strawberry in chocolate and place on parchment or wax paper. Let sit until the chocolate has hardened (place in the fridge to speed up).
  • Add bananas, strawberries, cocoa powder, 2 tbsp milk, and desired amount of maple syrup to a high-speed blender. Blend until smooth and creamy, adding more milk as necessary (this will depend on the power of your blender). Pour into a bowl.
  • Top the bowl with banana slices, granola, chocolate chips and chunks, and chocolate covered strawberries.
