Crockpot™ Slow Cooker Broccoli Cheddar Orzo

This recipe takes the creamy, cheesy deliciousness of broccoli cheddar soup and combines it with orzo for a delicious pasta dish.

Ingredients
  

  • 1 yellow onion, diced
  • 3 cloves garlic, peeled and minced
  • 1 1/2 cups (165 g) shredded carrots
  • 3 cups (270 g) chopped broccoli
  • 3 1/2 cups (840 ml) vegetable broth
  • 1 cup (340 ml) plain unsweetened rice milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 (16 oz [454 g]) package dry orzo
  • 2 cups (226 g) vegan cheddar cheese shreds
  • 2 tbsp (28 g) vegan butter
  • ½ cup (30 g) nutritional yeast
  • Salt and pepper to taste

Instructions
 

  • Add all vegetables, broth, milk, garlic powder and onion powder to the slow cooker. Stir, add the lid, and cook on low for 4-5 hours, until veggies are fork-tender.
  • Remove the lid and stir in the orzo. Add the lid and cook on high for 15-30 minutes, until the orzo is al dente.
  • Stir in the cheese, butter, and nutritional yeast until the cheese and butter are melted and everything is well combined. Taste and add salt and pepper, if needed. Serve!
