Method
- Preheat the oven to 350ยบ F
Make the Lentils & Rice
- Add the water, lentils and rice to a small saucepan.
- Bring to a boil.
- Simmer & let cook until the water has evaporated (for about 30 minutes depending on the type of rice)
Make the Carmelized Onions
- Chop the onion into thin slices.
- Add the onion, veggie broth & brown sugar to a pan and bring to a boil.
- Turn the heat down to a simmer & cook for about 20 minutes, until all liquid has evaporated.
Make the Meatballs
- Add the cashews, walnuts, nutritional yeast, garlic salt & parsley to a food processor and blend to a fine powder. Transfer to a mixing bowl & stir in the vital wheat gluten.
- Add the lentils, rice and carmelized onions to a food processor & blend. Place in the same mixing bowl & combine ingredients, forming a dough.
- Using a scooper, form the dough into equal sized "meatballs" and place on a lined baking sheet.
- Bake for about 40 minutes, until crispy, flipping them around every 10 minutes.
Assemble the Dish:
- Cook the noodles according to package.
- Melt margarine in a large saucepan over medium heat.
- Add the garlic & cook for about 3 minutes.
- Mix in the spinach & cover until wilted.
- Stir in the spaghetti & meatballs.
Make the Parmesan Topping
- Blend all ingredients in a food processor
- Top the noodle dish with the parmesan and enjoy!
