Chunky Monkey Mini Pancakes

These mini pancakes are cute, easy, and the perfect addition to any brunch.

Ingredients
  

Pancake batter
  • 1/2 cup (62 g) all-purpose flour
  • 1/2 cup (62 g) whole wheat flour (or more all-purpose flour)
  • 2 tbsp (30 g) granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • Dash of cinnamon (optional)
  • 2/3 cup (160 ml) nondairy milk
  • 1 tbsp (15 ml) canola or liquid coconut oil
  • Splash of pure vanilla extract
  • 1/4 cup vegan mini chocolate chips or chocolate chunks
For pan-frying
  • Canola or coconut oil
  • 1 banana, sliced
For serving
  • Chopped walnuts
  • Pure maple syrup or pancake syrup

Method
 

  1. Whisk the flours, sugar, baking powder, salt and cinnamon (if using) in a mixing bowl.
  2. Pour in the milk, oil, and vanilla and mix until just combined (leaving some chunks).
  3. Fold in the chocolate chips/chunks.
  4. Heat up a frying pan on medium-high heat and cover the bottom lightly with oil.
  5. For each pancake, place a slice of banana on the pan. Pour one tablespoon of batter on top of the banana slice. Make as many as you can at once without overcrowding the pan.
  6. Cook until golden-brown on each side.
  7. Serve with any remaining banana slices, walnuts, and syrup.
