Green Bagels

Our favorite St. Patrick's Day tradition - green bagels!
Servings: 8 bagels

Ingredients
  

  • 1 1/2 cup warm water
  • 1 tbsp sugar
  • 2 1/4 tsp (1 packet) fast rise yeast
  • 4 cups bread flour + extra for kneading
  • 1 1/2 tsp salt
  • a few drops green food coloring
  • Water for boiling

Method
 

  1. Add the sugar and yeast to the warm water. Let sit for ~5 minutes.
  2. Add the flour and salt to the bowl of a stand mixer with the dough hook attachment (can also use a hand mixer). Mix to combine.
  3. Stir the yeast mixture until the sugar and yeast are dissolved and add to the flour mixture. Add in a few drops of food coloring.
  4. Begin beating the mixture on low speed, scraping the sides as necessary. Allow to mix until a ball is formed.
  5. Transfer the ball to a lightly floured surface. Knead for ~five minutes, incorporating extra flour.
  6. Form the dough into a ball and transfer to a large, lightly oiled bowl, turning the dough to coat it with oil. Cover the bowl with a towel and set aside to rise for approximately one hour.
  7. Once the dough has about doubled, punch it to release any air bubbles and divide it into eight pieces.
  8. Shape each piece into a ball and press through the center of each ball to make a hole. Place the shaped balls onto a lined baking sheet and cover with a towel and set aside.
  9. Preheat the oven to 450°F and fill a large pot with water. Bring it to a boil.
  10. Doing a few at a time, place each piece of the dough into the boiling water, allowing to boil on each side for ~1 minute. You can add toppings to the bagels immediately after they come out of the water.
  11. Once done, place each piece of dough back on the lined baking sheet and place in the oven for 16-20 minutes, until the bagels are golden brown.
  12. Slice and enjoy with vegan cream cheese or your favorite spread!
