Peanut Chick'n Wraps

Ingredients
  

  • 1 tbsp. oil
  • 1 10oz bag vegan chik'n strips (we used MorningStar)
  • 1/4 cup peanut sauce plus extra for topping - we used Trader Joe's Asian style spicy peanut vinaigrette*
  • 4-5 flour tortillas can sub gluten free
  • Spring mix
  • Shredded carrots
  • Crispy chow mein noodles can sub gluten free alternative or omit

Method
 

  1. Heat oil in a saucepan on medium-high heat.
  2. Add the chik’n to the saucepan and sauté for ~5 minutes.
  3. Pour the sauce on top of the chik’n.
  4. Sauté for another ~5 minutes.
  5. Crisp each tortilla on a pan on medium-high heat.
  6. To form the wraps, place spring mix, carrots, noodles, then chik’n strips. Drizzle with more sauce if desired!

Notes

*You can also make a homemade peanut sauce by whisking together 1.5 tbsp. peanut butter, 2.5 tbsp. soy sauce, a splash of unseasoned rice vinegar & sriracha (to taste).
