Spicy Peanut Hummus

The name kind of says it all… peanut AND hummus in the same sentence? Count us in. You probably have all the ingredients on-hand, so go ahead and try it, you will not be disappointed!

Ingredients
  

  • 1 15 oz. can of chickpeas drained and rinsed (save drained chickpea water)
  • 2 tbsp. peanut butter
  • 2 tsp. sriracha or hot sauce of your choice
  • 1 tsp. olive or avocado oil
  • 3-4 tbsp. chickpea water for thinning, add more or less as you need
  • 2 tsp. chopped cilantro save half for serving

Method
 

  1. Add all ingredients except chickpea water in a high-speed blender or food processor. Let blend until mixture becomes too thick and water is needed.
  2. Add water 1 tbsp. at a time until you achieve desired texture and it is nice and creamy. We prefer about 4 tbsp.
  3. Top hummus with leftover cilantro & serve with sides of your choice. We love dipping just about anything in it- carrots, celery, red pepper, cucumber, crackers… get creative!
