Crockpot™ Slow Cooker Broccoli Cheddar Orzo

This recipe takes the creamy, cheesy deliciousness of broccoli cheddar soup and combines it with orzo for a delicious pasta dish.

Ingredients
  

  • 1 yellow onion, diced
  • 3 cloves garlic, peeled and minced
  • 1 1/2 cups (165 g) shredded carrots
  • 3 cups (270 g) chopped broccoli
  • 3 1/2 cups (840 ml) vegetable broth
  • 1 cup (340 ml) plain unsweetened rice milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 (16 oz [454 g]) package dry orzo
  • 2 cups (226 g) vegan cheddar cheese shreds
  • 2 tbsp (28 g) vegan butter
  • ½ cup (30 g) nutritional yeast
  • Salt and pepper to taste

Method
 

  1. Add all vegetables, broth, milk, garlic powder and onion powder to the slow cooker. Stir, add the lid, and cook on low for 4-5 hours, until veggies are fork-tender.
  2. Remove the lid and stir in the orzo. Add the lid and cook on high for 15-30 minutes, until the orzo is al dente.
  3. Stir in the cheese, butter, and nutritional yeast until the cheese and butter are melted and everything is well combined. Taste and add salt and pepper, if needed. Serve!
