About this dish

One of our favorite meals growing up was Broccoli Cheddar Soup, and this dish takes all of the delicious flavors and creaminess of that soup and turns it into an out-of-this-world pasta dish!

Thanks to Crockpot™ Slow Cooker, this recipe requires just a few steps and allows you to enjoy other activities while your slow cooker does the work!

Ingredients

  • veggies: onion, garlic, carrots, and broccoli
  • liquid: vegetable broth and plain unsweetened rice milk
  • spices: garlic powder and onion powder
  • pasta: dry orzo
  • cheese flavor: vegan cheddar cheese shreds and nutritional yeast
  • for extra richness: vegan butter
  • to taste: salt and pepper

How to make this orzo

  1. Add all vegetables, broth, milk, garlic powder and onion powder to the slow cooker. Stir, add the lid, and cook on low for 4-5 hours, until veggies are fork-tender.
  2. Remove the lid and stir in the orzo. Add the lid and cook on high for 15-30 minutes, until the orzo is al dente.
  3. Stir in the cheese, butter, and nutritional yeast until the cheese and butter are melted and everything is well combined. Taste and add salt and pepper, if needed. Serve!

Ingredients
  

  • 1 yellow onion, diced
  • 3 cloves garlic, peeled and minced
  • 1 1/2 cups (165 g) shredded carrots
  • 3 cups (270 g) chopped broccoli
  • 3 1/2 cups (840 ml) vegetable broth
  • 1 cup (340 ml) plain unsweetened rice milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 (16 oz [454 g]) package dry orzo
  • 2 cups (226 g) vegan cheddar cheese shreds
  • 2 tbsp (28 g) vegan butter
  • ½ cup (30 g) nutritional yeast
  • Salt and pepper to taste

Instructions
