We are so excited to announce that we are (once again!) Crockpot™ ambassadors for 2022! We have always (and we mean always) been fans of Crockpot™ (and consistently use them in our daily lives), so getting to be ambassadors for the second year in a row means the world to us. For our first Crockpot™ recipe of 2022, we’re bringing you a slow cooker vegan “bulgogi” recipe that’s so easy and versatile, it’ll be a staple in your weekly dinner rotation.
If you aren’t familiar with traditional bulgogi, it’s typically thin, marinated slices of beef or pork that’s grilled or cooked on a stove top. For our recipe, we (of course!) swapped the meat for vegan “beef” crumbles and created a super simple recipe that’s made in (you guessed it!) our favorite Crockpot™.
For this particular recipe, we used our 7QT Design Series Cook & Carry Slow Cooker (in the gorgeous mushroom color), but feel free to use your favorite Crockpot™ Slow Cooker for this recipe (any will work)!
For this recipe, all you need is:
Vegan “Beef” Crumbles
Low-Sodium Soy Sauce
Optional: Green Onions & Sesame Seeds (for topping)
The best part about this recipe is that all you have to do is add all of the ingredients to your Crockpot™ and the rest is handled for you. If you’re looking to serve a large crowd, you can easily double the recipe. Here, we’ve served it over rice, but feel free to serve it on slider buns (with your favorite toppings), add to a stir fry, put into dumplings or spring rolls–the opportunities are endless.

Slow Cooker Vegan “Bulgogi”
- Slow Cooker (we used our Crockpot™ 7QT Design Series Cook & Carry Slow Cooker)
- 20 oz (560 g) vegan beef crumbles
- 1/2 cup (120 ml) low sodium soy sauce
- 2 tbsp (27 g) brown sugar
- 2 tbsp (30 ml) mirin
- 2 tsp (10 ml) sesame oil
- 1/2 tsp black pepper
- 1 inch ginger, minced
- 4 cloves garlic, minced
For serving (optional)
- Prepared white rice
- Green onion, chopped
- Sesame seeds
- Add all ingredients for the "bulgogi" to your Crockpot™ Slow Cooker.
- Let cook on low for 3 hours (until the liquid has been absorbed).
- Serve as desired! We recommend serving over a bed of rice topped with green onions and sesame seeds.
