Peanut Broccoli

Ingredients
  

  • 2 tsp canola or olive oil
  • 8 cups diced broccoli
  • 1/2 cup water separated
Sauce
  • 1 tsp sesame oil
  • 1/4 cup peanut butter
  • 3 tbsp soy sauce
  • 1 tsp chili garlic sauce
  • 1 tbsp rice vinegar
  • 1 tsp agave or maple syrup

Method
 

  1. Heat canola or olive oil in a large saucepan over low-medium heat. Add broccoli and let cook, covered, for 5 minutes.
  2. Stir in 1/4 cup water, then cover and cook for 10 more minutes.
  3. Stir in another 1/4 cup water, cover and cook for another 7-10 minutes, until a fork can poke through - be sure that they're cooked through but not too soft.
  4. Meanwhile, whisk the sauce ingredients together in a separate small bowl.
  5. Once broccoli is cooked, stir in sauce and cook for another minute or so while stirring. Serve immediately on a bed of rice or with your favorite main dish!
