Triple Layer Power Bars

These chocolatey, nutty protein bars are made with real ingredients + superfoods. So, go ahead, eat up!

Ingredients
  

Choco-hazelnut layer:
  • 1 cup dates soak in warm water for ~15 mins if not soft
  • 1 cup hazelnuts toast @ 325°F for ~10 mins
  • 1/3 cup chocolate protein powder we used Vega
  • 2 tbsp cocoa powder
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup vegan crispy rice cereal
Peanut butter layer:
  • 2 cups peanuts toast @ 325°F for 5-7 mins
  • 2 tbsp melted coconut oil
  • 2 tbsp agave
  • 1/4 cup coconut flour
Chocolate ganache:
  • 2 tbsp melted coconut oil
  • 2 tbsp agave
  • 3 tbsp cocoa powder
Toppings:
  • 1/4 cup chopped peanuts
  • 1/4 cup mini chocolate chips

Method
 

Start by making the choco-hazelnut layer:
  1. Blend all ingredients (minus cereal) in a food processor until well blended.
  2. Fold in cereal.
  3. Press into a lined 8×8 pan. Put in freezer to chill.
Make the peanut butter layer:
  1. Blend peanuts in a food processor until powdery.
  2. Add coconut oil and continue to blend until the consistency is a thin peanut butter.
  3. Blend in the agave and coconut flour.
  4. Spread mixture on top of the hazelnut layer.
Make the chocolate ganache:
  1. Whisk all ingredients together and pour on top of peanut butter layer.
  2. Sprinkle on toppings.
  3. Freeze until solid, then slice and serve!
