Triple Layer Power Bars

We absolutely love these as an alternative to store bought power bars! They are healthy, filled with superfoods and super delicious. Make these ahead of time and have a healthy breakfast prepared every morning!

All you need is:

Dates | Hazelnuts | Crispy Rice Cereal | Peanuts | Chocolate Protein Powder, Vega or Orgain | Cocoa Powder | Vanilla Extract | Coconut Oil | Agave | Coconut Flour | Chocolate Chips | Mini Food Processor

Triple Layer Power Bars

These chocolatey, nutty protein bars are made with real ingredients + superfoods. So, go ahead, eat up!

Ingredients
  

Choco-hazelnut layer:

  • 1 cup dates soak in warm water for ~15 mins if not soft
  • 1 cup hazelnuts toast @ 325°F for ~10 mins
  • 1/3 cup chocolate protein powder we used Vega
  • 2 tbsp cocoa powder
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup vegan crispy rice cereal

Peanut butter layer:

  • 2 cups peanuts toast @ 325°F for 5-7 mins
  • 2 tbsp melted coconut oil
  • 2 tbsp agave
  • 1/4 cup coconut flour

Chocolate ganache:

  • 2 tbsp melted coconut oil
  • 2 tbsp agave
  • 3 tbsp cocoa powder

Toppings:

  • 1/4 cup chopped peanuts
  • 1/4 cup mini chocolate chips

Instructions
 

Start by making the choco-hazelnut layer:

  • Blend all ingredients (minus cereal) in a food processor until well blended.
  • Fold in cereal.
  • Press into a lined 8×8 pan. Put in freezer to chill.

Make the peanut butter layer:

  • Blend peanuts in a food processor until powdery.
  • Add coconut oil and continue to blend until the consistency is a thin peanut butter.
  • Blend in the agave and coconut flour.
  • Spread mixture on top of the hazelnut layer.

Make the chocolate ganache:

  • Whisk all ingredients together and pour on top of peanut butter layer.
  • Sprinkle on toppings.
  • Freeze until solid, then slice and serve!
