Vegan Mushroom Gravy

The easiest vegan gravy to top any dish you'd like - we love it on vegan poutine and tofurkey!

Ingredients
  

  • 2 tbsp. vegan butter
  • 3/4 cup mushrooms diced
  • 1/2 cup shallots or onions diced
  • 3 tbsp. flour
  • 1/2 cup rice milk plain, unsweetened
  • 1 cup vegetable stock
  • 1 tsp. garlic powder
  • 2 tsp. soy sauce low sodium

Method
 

  1. Melt butter in a small pan over low-medium heat.
  2. Add diced mushrooms and shallots (or onion) and mix. Cook covered for five minutes (stirring occasionally).
  3. Add flour and mix until flour is completely incorporated.
  4. Add rice milk and vegetable stock. Mix well.
  5. Next, add garlic powder and soy sauce. Bring to a boil and then let simmer for 10-15 minutes.
