These pink and white cookies are the ultimate V-Day treat! They're a cross between a sugar cookie and a chocolate chip cookie, with a festive twist. They're soft, chewy, and bursting with white chocolate chips.

Ingredients
  

  • 2 1/4 cups (281 g) all-purpose flour measured correctly*
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp (5 g) cornstarch
  • 3/4 cup (169 g) vegan butter, softened*
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (55 g) packed light brown sugar
  • 1/4 cup (60 mL) non-dairy milk
  • 1 tsp pure vanilla extract
  • A few drops vegan pink gel food coloring
  • 1 cup (168 g) vegan white chocolate chips

Method
 

  1. Preheat the oven to 350°F (180°C). Line three baking sheets with parchment paper and set aside.
  2. In a medium-sized mixing bowl, whisk the flour, salt, baking soda, and cornstarch.
  3. In a large mixing bowl, add the butter, sugar and brown sugar. Beat until light and fluffy, 1-2 minutes. Add the milk, vanilla, and a few drops of food coloring and beat again until smooth and creamy.
  4. Add about half of the flour mixture to the wet mixture and mix until just combined. Add the rest and mix until just combined.
  5. Fold in the white chocolate chips.
  6. Roll out ~1.5 tbsp (22 g) balls of dough. Place on the prepared baking sheets, leaving about 2" (5 cm) between each.
  7. Bake in the preheated oven for 9-11 minutes.
  8. Allow to cool on the baking sheets then enjoy!
