These pink and white cookies are the ultimate V-Day treat! They’re a cross between a sugar cookie and a chocolate chip cookie, with a festive twist. They’re soft, chewy, and bursting with white chocolate chips.

How to make these cookies

  1. Prepare. Preheat the oven to 350°F (180°C). Line three baking sheets with parchment paper and set aside.
  2. Whisk together the dry ingredients. In a medium-sized mixing bowl, whisk together flour, salt, baking soda, and cornstarch.
  3. Beat the wet ingredients. In a large mixing bowl, add vegan butter, sugar and brown sugar. Beat until light and fluffy, 1-2 minutes. Add nondairy milk, vanilla, and a few drops of pink food coloring and beat again until smooth and creamy.
  4. Combine. Add about half of the flour mixture to the wet mixture and mix until just combined. Add the rest and mix until just combined.
  5. Add the white chocolate. Fold in vegan white chocolate chips.
  6. Bake. Roll out ~1.5 tbsp (22 g) balls of dough. Place on the prepared baking sheets, leaving about 2″ (5 cm) between each. Bake in the preheated oven for 9-11 minutes.
  7. Serve. Allow to cool on the baking sheets then enjoy!

  • 2 1/4 cups (281 g) all-purpose flour measured correctly*
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp (5 g) cornstarch
  • 3/4 cup (169 g) vegan butter, softened*
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (55 g) packed light brown sugar
  • 1/4 cup (60 mL) non-dairy milk
  • 1 tsp pure vanilla extract
  • A few drops vegan pink gel food coloring
  • 1 cup (168 g) vegan white chocolate chips
