These pink and white cookies are the ultimate V-Day treat! They’re a cross between a sugar cookie and a chocolate chip cookie, with a festive twist. They’re soft, chewy, and bursting with white chocolate chips.

Ingredients
- all-purpose flour (measured correctly)
- baking soda
- salt
- cornstarch
- vegan butter
- granulated sugar
- light brown sugar
- nondairy milk
- pure vanilla extract (these would also be delicious with a touch of almond extract!)
- pink gel food coloring
- vegan white chocolate chips

How to make these cookies
- Prepare. Preheat the oven to 350°F (180°C). Line three baking sheets with parchment paper and set aside.
- Whisk together the dry ingredients. In a medium-sized mixing bowl, whisk together flour, salt, baking soda, and cornstarch.
- Beat the wet ingredients. In a large mixing bowl, add vegan butter, sugar and brown sugar. Beat until light and fluffy, 1-2 minutes. Add nondairy milk, vanilla, and a few drops of pink food coloring and beat again until smooth and creamy.
- Combine. Add about half of the flour mixture to the wet mixture and mix until just combined. Add the rest and mix until just combined.
- Add the white chocolate. Fold in vegan white chocolate chips.
- Bake. Roll out ~1.5 tbsp (22 g) balls of dough. Place on the prepared baking sheets, leaving about 2″ (5 cm) between each. Bake in the preheated oven for 9-11 minutes.
- Serve. Allow to cool on the baking sheets then enjoy!
