These bars combine delicious edible sugar cookie dough with a white chocolate topping and fun sprinkles for a delectable, beyond cute dessert.

Ingredients

There are three different aspects of these bars: the cookie dough, the white chocolate ganache, and vegan sprinkles. You’ll need just 9 ingredients in total to make them.

How to make these bars

Start by making a delicious, 6-ingredient edible sugar cookie dough. Press it into desired sized pan (lined with parchment paper). Place in the freezer.

Next, melt some vegan white chocolate with a little coconut oil until creamy. Remove the cookie dough from the freezer and top with the white chocolate.

Finish it off with sprinkles of choice! Then allow the chocolate to set and chop into pieces. Enjoy!

Ingredients
  

Sugar Cookie Dough

  • 1 cup (125 g) all-purpose flour (measured correctly*)
  • 1/2 cup (113 g) vegan butter
  • 3/4 cup (165 g) granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tbsp (15 ml) nondairy milk
  • 1/4 tsp salt

White Chocolate Ganache

  • 1 cup (170 g) vegan white chocolate chips
  • 1 tbsp (15 ml) refined coconut oil

For Topping

  • Vegan sprinkles

Instructions
 

Prepare the cookie dough:

  • Preheat the oven to 350°F. Spread the flour onto a baking sheet. Bake for 5 minutes, then set aside to cool completely.
  • Place the vegan butter and sugar into a large mixing bowl and beat until light and fluffy. Add the vanilla and milk and beat again until light and fluffy.
  • Add the flour and salt and mix until combined.
  • Line a loaf pan or 8"x8" pan with parchment paper.*
  • Press the cookie dough evenly into the bottom of the pan. Place in the freezer while you make the ganache.

Make the ganache:

  • Place the white chocolate chips and coconut oil into a microwave-safe bowl. Microwave in 30-second intervals, stirring each time, until the ganache is melted and smooth.*

Assemble:

  • Remove the dough from the freezer and pour the ganache over the top, spreading so that it covers the dough evenly.
  • Top with sprinkles.
  • Refrigerate or freeze until the chocolate is firm.
  • Cut into 8-9 large pieces or 24-36 mini pieces and enjoy! Store in an air tight container in the fridge or freezer.

Notes

  1. Measure your flour by gently spooning it into your dry measuring cup, then scraping off excess with the back of a knife.
  2. A loaf pan will yield thick bars, while an 8″x8″ pan will yield thinner bars.
  3. Be careful not to burn the chocolate. Once it is close to being completely melted, you may want to decrease to 15-second intervals.
