We veganized pesto and combined it with penne pasta… what could be better??
So simple yet so delicious!
Pesto Penne Pasta
- 3 cups penne pasta uncooked
- 2 cups basil leaves
- 1 cup olive oil
- 4 tbsp walnuts
- 2 garlic cloves
- Cook pasta according to package.
- Blend basil leaves, olive oil, walnuts, and garlic in a food processor.
- Stir in pesto in cooked pasta and warm over low heat.
- Top with vegan parmesan or nutritional yeast if desired then serve!
