Peppermint Joe Joe Cake Pop Truffles
Ingredients
- 1 cup all purpose flour
- 2 tbsp cocoa powder
- 1/4 tsp baking soda
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sugar
- 1/2 cup soy milk (room temp or slightly warmed) + 1 tsp apple cider vinegar
- 1/4 cup vegan butter
- 1/4 cup chocolate chips
- 1/8 tsp peppermint extract
Chocolate coating:
- 1 1/2 cup chocolate chips
Extras:
- 5 candy cane joe joes
Instructions
- Preheat the oven to 350°F. Grease an 8×8″ pan.
- Make the cake: In a measuring cup or bowl, whisk the milk and vinegar. Set aside.
- In a microwave safe bowl, melt the butter and chocolate chips. Add the vanilla and peppermint extract and mix.
- In another bowl, whisk the flour, sugar, baking soda and powder, and salt.
- Pour the milk mixture and chocolate mixture into the dry ingredients. Mix until combined.
- Pour the batter into your pan. Bake for 20-25 minutes, until a toothpick comes out clean.
- Make the buttercream: In a large mixing bowl, add the buttery stick. Beat until fluffy.
- Add the powdered sugar and cocoa powder and beat. Add milk as necessary to reach desired consistency.
- Beat in peppermint extract.
- Make the cake pops: once the cake is chilled, crumble it into a mixing bowl. Blend in the buttercream and four crushed Joe Joe's.
- Scoop out tablespoons of the mixture, roll into balls, and place on a lined baking sheet. Place in the freezer.
- Begin to melt your chocolate over a double broiler (we create one by boiling water in a saucepan then setting a large glass bowl on the pan so that it sits above the water).
- Once the balls are chilled, coat each one in melted chocolate and set on the pan. Top with a sprinkle of the remaining crushed joe joes and sprinkles! These taste delish out of the freezer but they will stay solid at room temp, making them perfect for parties!

Super confused. The directions have to make a buttercream but I don’t see the ingredients for the buttercream listed when I print out the recipe.
