Chocolate Chip Banana Bread

This banana bread is deliciously spiced with cinnamon and nutmeg and loaded with chocolate chips for the perfect winter treat. What better way to wake up on a chilly morning than with a slice of this banana bread to go with your coffee?

Ingredients

You’ll need the following plant-based ingredients for this banana bread:

  • all-purpose flour
  • baking soda, baking powder, and salt
  • cinnamon and nutmeg
  • overripe bananas
  • vegetable oil
  • non-dairy milk
  • granulated sugar
  • brown sugar
  • vanilla extract
  • non-dairy chocolate chips

How-to

  1. Prepare. Preheat the oven to 350°F and grease a 9×5 loaf pan.
  2. Mix the dry ingredients. In a medium mixing bowl, whisk the flour, baking soda, baking powder, cinnamon, nutmeg and salt.
  3. Mix the wet ingredients. Mash the bananas in a large mixing bowl. Mix in the oil, milk, sugars and vanilla.
  4. Combine and add chocolate chips. Fold the dry mixture into the wet. Mix in the chocolate chips.
  5. Bake. Pour into the prepared loaf pan. Bake for 58-62 minutes, until a toothpick inserted into the center comes out clean or with just crumbs, no raw batter.
  6. Serve. Allow to cool at least 15 minutes before removing from the pan. Slice and serve!

Ingredients
  

  • 1 3/4 cups (218 g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/8 tsp nutmeg
  • 3 overripe medium-sized bananas
  • 1/3 cup (80 ml) vegetable oil
  • 1/4 cup (60 ml) non-dairy milk
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (55 g) packed light brown sugar
  • 1 tsp pure vanilla extract
  • 1 cup (168 g) vegan chocolate chips

Instructions
 

  • Preheat the oven to 350°F. Grease a 9”x5” loaf pan.
  • In a medium mixing bowl, add the flour, baking soda, baking powder, cinnamon, nutmeg and salt. Whisk to combine.
  • Mash the bananas in a large mixing bowl. Add the oil, milk, sugars and vanilla and mix to combine.
  • Fold the dry mixture into the wet. Mix in the chocolate chips.
  • Pour into the prepared loaf pan. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean or with just crumbs, no raw batter.
  • Allow to cool at least 15 minutes before removing from the pan. Slice and serve!

    This was the BEST vegan banana bread I’ve tried – and I’ve tried a lot! This came out so light and moist. I didn’t use nutmeg. I put grape nuts cereal on top for a little crunch – it looks pretty too. ( my kids have nut allergies )
