You need just 8 simple ingredients for this recipe:
- vegan butter (melted and cooled)
- granulated sugar
- light brown sugar
- pure vanilla extract
- all-purpose flour
- baking soda
- salt
- vegan chocolate chips
How to make this brittle
- Prepare: Preheat the oven to 325°F and line a baking sheet with parchment paper.
- Make the dough: In a large mixing bowl, stir together the melted and cooled butter, sugar, brown sugar and vanilla. Add the flour, baking soda and salt and stir until just combined. Fold in the chocolate chips.
- Press down onto the pan: Place the dough on the lined baking sheet and press it down as thin as possible, making one large rectangle of dough.
- Bake and serve: Bake for 20 minutes then remove from the oven and allow to cool completely. Cut into desired size/shape pieces and enjoy!
How to serve this cookie brittle
This brittle is delicious on its own, however there are a few ways you could improve it.
- Chop it up small and serve it as cereal with your favorite nondairy milk.
- Dip it into a creamy, sweet dessert dip.
- Dip it into hot cocoa or warm chocolate ganache!

Ingredients
- 1/2 cup (1 stick; 113 g) vegan butter
- 1/2 cup (100 g) granulated sugar
- 1/4 cup (55 g) packed light brown sugar
- 1 tsp pure vanilla extract
- 1 cup (125 g) all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup (127 g) regular or mini vegan chocolate chips
Instructions
- Preheat the oven to 325°F and line a baking sheet with parchment paper.
- Partially melt the butter in the microwave or on the stovetop so that it is about halfway melted.
- In a large mixing bowl, stir together the partially melted butter, sugar, brown sugar and vanilla. Add the flour, baking soda and salt and stir until just combined. Fold in the chocolate chips.
- Place the dough on the lined baking sheet and press it down as thin as possible, making one large rectangle of dough.
- Bake for 18-20 minutes then remove from the oven and allow to cool completely. Cut into desired size/shape pieces and enjoy!
